Italian Style Salmon and Spinach (4 servings)
4 salmon steaks (6 oz or so)
1 lb bag of fresh baby spinach
½ cup heavy cream
½ parmesan cheese
1 tsp. freshly grated nutmeg
Salt and pepper
1 small tomato, finely diced
1 Tbs. finely chopped parsley
- Put a pot of water on to boil.
- Make sure the salmon steaks are free of skin and bones. Salt and pepper both sides and sit them aside.
- Wash the spinach by submersing several times into a clean sink full of water.
- Put the spinach into the boiling water and allow to boil for 1 minute.
- Remove the spinach and plunge immediately into icy cold water for a minute to refresh.
- Place spinach in a clean kitchen towel or piece of linen and wring out as much water as you can.
- Chop spinach and combine with the heavy cream, parmesan and nutmeg.
- Place the salmon steaks on a lightly greased grill pan or frying pan. Cook for 3-4 minutes per side.
- Pour the spinach mixture over the salmon and cook until golden brown.
- Top with tomatoes and parsley.
- Serve with crusty bread or brushcetta and a salad. (This would also be delish with risotto.)
