Brandy's Italian Baked Salmon

Italian Baked Salmon (4 servings)

4 Tbs Olive Oil
2 minced cloves of garlic
½ cup white wine or water
4 Tbs. fresh lemon juice
1 ½ cups fresh basil leaves
½ grated Parmesan cheese
1 tsp. Dijon mustard
1 dash Cayenne pepper or red pepper flakes (use paprika if you don’t like heat)
4 Salmon steaks or fillets

- Put all ingredients except for Salmon into a blender or food processor and blend until fine.
- Put 1/3 of the sauce in the bottom of a baking dish that has been lightly coated with cooking spray.
- Place the salmon over the sauce and top evenly with the remaining sauce. Cover and allow to marinate in the fridge for at least 2 hours.
- Uncover and bake in a 400 degree oven for 20 minutes. Cover loosely and bake for 5 more minutes.
- Serve over greens or fettuccini alfredo, with crusty bread or bruschetta.
