1 cup all purpose flour
1 1/4 cup sugar
1 stick butter
2-3 cups ripe plums, pitts removed and sliced
2 eggs
1/2 cup milk
1/2 tsp. cinnamon
1/2 tsp vanilla
pinch salt
1/4 tsp. baking powder
Mix together flour and 1 cup sugar. Cut the butter into the mixture until it looks grainy. Take out half of this mixture, and set aside. To the remaining, add the cinnamon, salt, and baking powder and 1 egg. Mix together and press into a pie pan. Bake at 375 for 12 minutes. Add plums on top of crust. Mix together the other egg, milk, vanilla and 1/4 cup sugar. Pour over plums, top with the remaining sugar/flour/butter mixture. Bake at 375 for 25 minutes. Serve with vanilla ice cream!
